DeKALB – In the span of a month, DeKalb lost a longtime breakfast establishment, but now is expected to get another, as a popular Sycamore business plans to expand its offerings for a Mexican-style breakfast and lunch eatery.
Los Panchos Eggsperience Cafe is set to move into the building that until recently housed Flappy's Pancake House, and the owners are bringing over their expertise from Los Panchos Mexican Restaurant in Sycamore.
Owner Francisco Morales said he was excited to expand his business, which is expected to open around the end of February, Morales said.
"We talked a little about it and planned it out," Morales said about the plan to expand his restaurant business to DeKalb. "And we're excited."
The new space will replace Flappy's at 1406 Sycamore Road in DeKalb, after the former tenant was left to find new space when their lease wasn't renewed. Eggsperience Cafe will offer breakfast and lunch with a Mexican twist, and will be open until 3 p.m. daily.
Morales and his wife, Lesly Morales, opened Los Panchos Mexican Restaurant in 2016 at 1470 S. Peace Road in Sycamore (formerly Cabana Charley’s), and have enjoyed enough success that they're jumping at the opportunity to grow their operation.
Before opening Los Panchos in Sycamore, the couple had never owned a restaurant, although they weren't coming to the table empty-handed. Both have years of restaurant experience and have worked in the industry in a number of capacities, he said.
As the couple prepares to open Eggsperience, they're doing some interior work, which has already started, to make way for their crew. Some of the interior walls have been taken down, and the couple is bringing in new equipment for the kitchen, dining booths and tables.
DeKalb businessman Jim Mason, who owns the building, said he didn't renew the longtime tenants' lease for Flappy's because he wanted to go in a new direction.
The breakfast eatery closed its doors Jan. 6. It was a 10-year lease they had hoped to renew, Andy Ahmeti, one of the owners, has said.
Mason said he already had Los Panchos Eggsperience in mind when he decided not to renew Flappy's lease. He called the new restaurant "super."
