New family-run bakery opens in Hinckley

HINCKLEY – Equipped with her mother’s coffee cake recipe and help in the kitchen from her family, Jacqueline Harrington fulfilled her lifelong dream of opening a bakery.

She opened The Harrington Family Bakery, 146 E. Lincoln Ave. in Hinckley, in mid-March after moving to the village about a year ago.

“There wasn’t a place in Hinckley where you could just go get a cup of coffee and a pastry,” Harrington said. “You could get coffee at places, but if you wanted a cupcake, a cookie or anything, you couldn’t get it unless it was prepackaged.”

Harrington said her affinity for baking was inspired by her late mother, who baked every day.

“There was always something cooking or baking,” she said. “In our backyard, we had peach trees, apple trees and a garden, so there was always something with food going on in our house.”

Harrington said the support of her family has been instrumental in opening and running the bakery, which is how the bakery got its name.

Her siblings, nieces, nephews and children all have offered to lend a hand.

“I own the bakery, and then my family actually comes and volunteers,” she said. “They call it playing bakery.”

The bakery offers a variety of goods, such as coffee cake made with fresh fruit, doughnuts, cookies, personal pies called “MyPies,” turnovers and biscotti.

The coffee cake is a tweak on her mother’s recipe and has proved to be a favorite among customers, she said. The cookies also have been selling well, including Harrington’s own recipe for the “big chip” giant chocolate chip cookie.

MyPies are big enough for two servings, but most customers want their own, Harrington said.

“You can feed two people with it, but nobody ever wants to share it,” she said.

Harrington said she buys local produce for the bakery, so flavors rotate depending on what the market has to offer.

“If you go to the store and the blueberries look good, then there will be blueberries that week, or blackberries,” she said. “It just depends on what’s good.”

The bakery is open from 7 a.m. to 3:30 p.m. Tuesday through Saturday.
