A fabulous steak is in part about the sauce. No, not “____ Steak Sauce".
Coming out of a bottle, that's just too everyday. We want something truly special that will tickle all of your taste buds. How about Roasted Garlic with Horseradish Cream Sauce? When we grill steak don’t over season the meat. Truly, if you have a worthy piece of steak just salt and pepper will highlight the great flavor of the meat. Then we make a sauce to go on the side so that some of our steak bites have a little sauce clinging to them.
Wow, I’ve done it again. Here it is shortly after breakfast as I write this and I’ve made myself hungry. Break time……I’ve got to go get something to eat.
OK, I’m back and ready to share this delicious and simple recipe. First you need to roast a head of garlic. For those of you that purchased a garlic roaster from my store, when it was open, you are already ahead of the game. So go and roast a whole head of garlic. For the rest of you just follow the simple instructions in the recipe.
Roasted Garlic with Horseradish Cream Sauce
1 head garlic, intact
1 tsp extra virgin olive oil
Pinch of salt
2 cups heavy cream
1/4 cup bottled horseradish
1/2 tsp salt
1/8 tsp white pepper
Cut off and discard the top 1/4 of the head of garlic, be sure that at least a little of each garlic clove has been cut. Drizzle exposed garlic with the olive oil and pinch of salt. Wrap in foil and bake at 375 for 1 ¼ hours. When done remove from oven and allow to cool. This can be done a day ahead of time.
While garlic cools simmer the cream in a sauce pan and reduce by half.
When garlic is cool remove the garlic from the skins and mash together with the horseradish, salt and pepper. When well combined whisk into the reduced cream and chill until ready to use on your steak. This sauce is also great for roast beef or prime rib.
