Tiny potatoes deliver big flavor

I always aim to achieve the tastiest combination of ingredients for your family’s enjoyment and nutritional needs. I hope this will be no exception, for today we're dealing with potatoes.
Coming out of South America, potatoes are an ancient food dating back over 8,000 years. There are literally thousands of varieties of potatoes. Of these, we see about a dozen or so in our local grocery. baking potatoes, Idaho potatoes, Yukon gold, red potatoes, new potatoes, fingerlings, even blue potatoes, which have a dark purple flesh. Each has their own particular characteristics and flavor.
Potatoes often are served with butter, onions, cheese and/or a variety of spices. While today we will be using some butter and green onions, we’re going to be incorporating a little brown sugar, which doesn't often go with new potatoes. I think you’ll find this to be quite palatable.
Today's recipe utilizes new potatoes, or very small red potatoes. When choosing your potatoes for this dish, buy the absolute smallest red potatoes you can find – only two bites per potato. If you don't think yours are small enough, cut them into pieces, just big enough for two bites, before you plunge them into the simmering, lightly salted water.
This is a unique take on serving potatoes, I hope you enjoy it.
Caramelized Potatoes
Serves four
1 lb new potatoes, cut into bite-size pieces as stated above
3 Tbl unsalted butter
3 Tbl brown sugar
1/8 tsp salt
3 grinds of fresh black pepper
1 tsp lemon zest
1 Tbl fresh lemon juice
2 green onions, rinsed dried and chopped
Cook the potatoes in a large pot of lightly salted boiling water for 10 minutes, or maybe a little less. You don't want to overcook them. Remove from the heat and drain.
Melt butter in your large pot and add brown sugar, salt, black pepper, lemon zest and lemon juice.
Simmer for just about a minute to allow the sugar to melt. Add your potatoes and toss with a spoon to evenly coat with your brown sugar mixture.
Transfer potatoes to a serving dish and garnish with the green onion.
